Food handlers put an approved food-safety plan into practice. This course concentrates on reliable checks, accurate records and prompt escalation within the learner’s assigned responsibility.

Learning objectives

  • Follow a food-process flow and recognise hazards relevant to the assigned task.
  • Apply the hygiene instructions and controls specified by the workplace.
  • Compare a check with an approved limit without changing the limit.
  • Report deviations promptly and complete an accurate monitoring record.
  • Explain how the handler’s records support supervisory verification.

Who should attend

Food handlers and catering staff who carry out preparation, storage, service or monitoring tasks under an approved HACCP plan.

Prerequisites

Basic food-hygiene awareness and familiarity with a food-handling workplace are recommended. The course does not assume responsibility for approving a HACCP plan.

Course curriculum

  1. Food-process flow and relevant hazards

    Follow the product from receipt to service and identify relevant handling hazards.

  2. Prerequisites and control measures

    Connect routine hygiene instructions with the control required at each task.

  3. Following validated limits and instructions

    Use the limits supplied in the approved plan; do not invent replacement values.

  4. Monitoring and reporting deviations

    Carry out scheduled checks, record results and escalate deviations.

  5. Records, verification and food-handler responsibilities

    Maintain traceable records and distinguish monitoring from supervisory verification.

Practical learning

Learners use a fictional meal-service instruction and its supplied limits to complete a check sheet. One reading is outside the instruction. They practise recording the result, identifying affected items and contacting the designated supervisor rather than releasing food on an assumption.

Assessment approach

A completed check sheet and short scenario questions assess correct use of instructions, honest recording and escalation. Workplace authorisation and any further supervised practice remain separate from course completion.

Completion information

An Al-Warkaa professional-development completion certificate may be issued against the confirmed attendance and assessment requirements. This is not a claim of professional licensure, regulatory authorisation or third-party accreditation.
